Bulgur Pilaf with Lemon & Herbs

Yield 8 servings
2 tbsp Olive oil
1 cup Onion, chopped
1 clove Garlic, finely chopped
1/4 tsp Turmeric
1/2 tsp Ground Cumin
2 cups Chicken Broth
1/2 cup Bulgur (medium grain)
1 cup Roasted Red Peppers, chopped
2 tsp Ginger, grated
1 tsp Kosher Salt
1/4 cup Fresh Dill, chopped
1/4 cup Fresh Mint, chopped
1/4 cup Parsley, chopped
3 tbsp Lemon Juice
In a large saucepan, heat olive oil.
Add onions and cook until translucent.
Add garlic, turmeric and cumin and cook until fragrant, about 1 minute.
Deglaze the pan with some of the chicken broth. Add remaining broth, bulgur, roasted red pepper, ginger and salt.
Cook covered for 15 min. Leave to rest until liquid is absorbed
Just before serving, add dill, mint, parsley, and lemon juice and toss to combine.
